At Shoukon, one young chef working at Kenya is selected every three months to create a course together with Head Chef Tabuchi. Each chef has their own unique personality and a different background. We believe that even those accustomed to eating delicious food on a regular basis will be able to sense something special in the dishes that tell a story and are imbued with their individual identity.
The restaurant's name comes from "Keiko Shoukon," a phrase found in the Kojiki (Records of Ancient Matters). It conveys the idea of studying the past and applying it to the present, and not simply accepting what we've learned from past experiences, but applying it to the present.
There are many things that inspire and challenge us in our work every day. We want to make the most of the ideas that come to mind during our time with our customers, illuminating the unique moment we share together around the table. This is the feeling we embodied in the name.
